HERBS AND REMEDIES FOR
COELIAC DISEASE (CELIAC)
Coeliac is an auto-immune disorder of the small intestine that occurs in genetically predisposed people of all ages from middle infancy upwards. It is caused by a reaction to a gluten protein found in wheat and other grains, such as barley, rye and oats. Symptoms include chronic diarrhoea, failure to thrive in children, mouth ulcers and fatigue. However, these symptoms are not always present. Once the disease has been identified, patients are advised never again to eat anything that includes gluten.

CORNMEAL
When maize (corn) is dried and ground, it is known as cornmeal. It is low in fibre, but a very good source of potassium and a useful source of phosphorus, iron and thiamin. It can sometimes be used as a replacement to wheat to a certain point. It is used to make polenta (Italian), breads, muffins (US), and tortillas (Mexican). Cornmeal and cornflour can be used to thicken stews and sauces.
MOUTH ULCERS
If you are suffering from mouth ulcers, avoid salty and acidic food such as pickles. Boiled sweets and alcohol will also aggravate the problem. Liquorice and fenugreek seeds may help this condition.
Ulcers may be helped by a neat tincture of LIQUORICE applied directly to the ulcer. Dose 2-4g a day or maximum 30g (1oz) per week.
Liquorice Tincture - Add 100g of chopped liquorice root to 300ml alcohol (vodka can be used) in a sterilized glass jar. Ensure liquorice is completely covered, close the lid and label. Shake contents each day for a few minutes. After 10 days, strain into a sterilized glass bottle and seal.
NOTE: DO not take liquorice in large doses in high blood pressure. During pregnancy, or for long term use, take only on advice from a doctor.
FENUGREEK SEEDS

They can be used in infusions to reduce fevers. They have digestive properties and are said to rid the body of toxins, dispelling bad breath and body odour.
